There is an old rule that red wine is served at room temperature. It comes from a time when room temperature meant a cold stone house in France, not a heated apartment — and at 72°F most light reds go flabby, sweet and alcoholic.
The category the trade now calls chillable reds is simply the wines that were always meant to be drunk cool: low in tannin, high in acidity, usually eleven or twelve percent, made to be finished rather than admired. The French have a phrase for them — vin de soif, wines of thirst.
