From Dave Phinney's Savage and Cooke distillery on Mare Island in Vallejo, this bourbon is built on a 75% corn, 21% rye, 4% malted barley mash bill and matured at least three years in new charred American oak before a finishing run in ex-Cabernet Sauvignon wine barrels. Bottled at 100 proof, the wine cask brings dark fruit and supple tannin to a classic bourbon backbone of caramel and vanilla. A polished expression that marries California winemaking with bourbon tradition.
