Brewed by Matsui Shuzo in Tochigi prefecture using locally grown Gohyakumangoku rice, Matsuno Kotobuki Ginjo is a graceful expression from a small family brewery devoted to handcrafted, regional sake. The ginjo classification calls for highly polished rice, here milled to a 55 percent ratio, which yields a clean, fragrant style full of delicate aromatics. Look for candied orange and strawberry on the nose with a crisp, mineral palate and notes of cherry and roasted walnut. A refined introduction to artisanal Japanese sake.
