Zumbador, meaning hummingbird, is a family distillery led by fourth-generation agave grower Roberto Lopez in the Jalisco highlands. This high-proof blanco, bottled at 108 proof, comes from estate agave grown at nearly 7,000 feet, cooked in traditional ovens and crushed with a volcanic stone tahona before fermenting without fibers. That artisanal process shows in the glass, with cooked agave leading alongside vanilla, tropical fruit, green olive, and saline minerality on a long, dry finish.
