The third release of Covenant's Black Label is the winery's rare mevushal Cabernet — outstanding barrels isolated from the 2023 vintage and gently flash-pasteurized so it can be poured at kosher tables and simchas without compromise. Fermented with native yeast, unfined and unfiltered, then aged 18 months in French oak (50% new), it shows ripe, supple tannins around a fruit-forward core lifted by fine-tuned herb and spice. Just 143 cases produced.
