Two hundred and fifty years ago a vast cave was quarried into the hillside at the heart of the Carmel range, and the cool, still air inside made it an ideal place to age wine. Binyamina named its flagship for it. The Cave is a Bordeaux-style blend of Cabernet Sauvignon, Merlot and Petit Verdot drawn from the winery's choicest Upper Galilee vineyards and aged twenty-four months in French oak. Rich and layered on the nose, full-bodied and elegant on the palate, with velvety tannins and a long, savory finish. This is a cellar-worthy bottle that will reward a decade or more of patience, and it is mevushal, so it pours anywhere.
